Healthier Fried Green Tomatoes

Anyone else have an abundance of green tomatoes? I gathered baskets of green tomatoes yesterday from our garden. After experimenting, I discovered this healthy version of this classic dish. A vegetarian and light option for fried green tomatoes, is perfect for using up the extra fall harvest.

This receipe serves two people. It is a great fall time appetizer and fantastic for parties as well.

Simple and quick:
– A bit of coconut oil heated in a pan
– Slice 4 tomatoes 1/2 inch thick
– Mix 2 egg whites with a tablespoon of milk or water
– 1/2 cup of flour
– 1/2 cup of whole wheat breadcrumbs plus salt and pepper to taste

Dip the tomatoes in the egg white mixture, then dip in flour, then dip in bread crumbs. Fry until evenly browned on both sides on a medium high setting. Place on paper towel to drain off excess oil.

Prep time: 10 minutes

Cook time: 10 minutes

Note, do not use red tomatoes for this recipe. They will turn to mush.
